
Wood-Fired Baked Goods
We always sprout, soak or ferment our grains before using them in our bread recipes. Our ancient starter is used to then ferment bread doughs for at least 24hrs before a slow rise and baked in our wood-fired oven. Other baked goods are also made with care to not use any inflammatory oils or refined sugars. We use our own rancho eggs and New Zealand grass-fed butter too!

Fermented Grains Sourdough Breads
All our products are done in small batches from our wood-fired oven on our rustic rancho. We believe in only eating healthy nutrient-dense ancestral foods and one way we do this is through sprouting, soaking and fermenting the grains. This traditional way to prepare grains is used in all our baking.
Fermented Oats Sourdough Bread
Sprouted Organic Oats are pre-soaked before cooking and then fermented for 24 hours with flour and our prized sourdough starter to create a beautiful dough that is then set for slow rise and baked to perfection in our wood-fired oven. * Due to the fermentation this bread is gluten friendly

Fermented Rice Sourdough Bread
Organic Brown Rice is soaked for 12-24 hrs first with S-Boulardi bacteria for additional beneficial bacteria and then cooked before being fermented with our prized sourdough starter and flour for 12-24 hours. The dough is then set for a slow rise and baked to perfection in our wood-fired oven. * Due to the fermentation process this bread is gluten friendly.

Yogurt-Fermented Sourdough Cinnamon Buns
These unique cinnamon buns are fermented with yogurt and whole milk together with sourdough starter and flour for 12-24 hours and then baked in our wood-fired oven. We use real butter and organic coconut sugar to make them and pure sugar cane for the cream cheese icing. They are chewy and soft and delicious and a healthy alternative to the traditional cinnamon bun.
